Joes Stone Crab Vinaigrette

This is the recipe for Joe's Stone Crabs' famous chunky Vinaigrette. It's a quick and easy recipe that you'll be eating for days. You can eat it on a big salad or something as plain as lettuce alone. This is the official recipe, but if I recall correctly, the dressing has chopped up hard boiled egg whites in it as well. Read more I could be wrong, but it adds a little something (not to mention protein). Oh, and you can toss this on something as simple as a wedge of lettuce or tomatoes. Make a ton of this stuff and store it in your fridge. You’ll thank me later. See less
Ingredients
- 1/4 cup chopped onion shopping list
- 3 tbsp minced fresh parsley shopping list
- 2 tbsp chopped pimento shopping list
- 1 1/2 tsp sugar (sub. with Splenda if you’d like) shopping list
- 1 tsp salt shopping list
- 1/2 tsp cayenne pepper shopping list
- 1/2 tsp drained capers (optional) shopping list
- 1/3 cup wine or cider vinegar shopping list
- 3/4 cup olive oil shopping list
How to make it
- Whisk together all the ingredients. Store in refrigerator.

Yeah, chopped really small. You can usually find a small jar with chopped pimentos. I think pimento is a type of pepper, but red would work. But if you don't have that, I'd soak some red peppers in oil til they're really soft.
