Ingredients

1/4 cup chopped onion

3 tbsp minced fresh parsley

2 tbsp chopped pimento

1 1/2 tsp sugar (sub. with Splenda if you’d like)

1 tsp salt

1/2 tsp cayenne pepper

1/2 tsp drained capers (optional)

1/3 cup wine or cider vinegar

3/4 cup olive oil

Directions

Whisk together all the ingredients. Store in refrigerator.

Yeah, chopped really small. You can usually find a small jar with chopped pimentos. I think pimento is a type of pepper, but red would work. But if you don't have that, I'd soak some red peppers in oil til they're really soft.
