River City Salade Parmesan Recipe
Much is to be said about this salad!! Easy. No-brainer. Make ahead. Great side dish. Great for picnics. Travels well. Great taste. Friendly. People love it. Enough said!!

Ingredients
  • 5 tablespoons freshly grated Parmesan cheese, divided
  • 1/4 cup olive or salad oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dry mustard
  • 1/2 teaspoon cracked black pepper
  • 2 cloves garlic, minced
  • Dash of salt
  • 10 to 12 cups torn salad greens
  • Croutons, broken walnuts, crumbled goat cheese, and/or a little balsamic vinegar (these are are all optional) Your choice.

Directions
  1. NOTE: You can make ahead of time by mixing the dressing in the bowl and putting the lettuce on top "unmixed" until serving time.
  2. Now, on your mark, get set, ready, GO.....
  3. In a large bowl, combine +3 tablespoons+ of the Parmesan cheese, the olive oil, lemon juice, dry mustard, pepper, garlic, and salt.
  4. TOP with salad greens.
  5. See how fast that was!
  6. If desired, add your choice of croutons, goat cheese, walnuts, and balsamic vinegar before serving. TOSS WELL. Sprinkle with remaining Parmesan cheese. Serve immediately.
