How to make it

  • For marinade, in small bowl gradually stir the boiling water into peanut butter(the mixture will stiffen at first) Stir in chili sauce, soy sauce,oil,garlic, vinegar,garlic, ginger and cayenne pepper; cool
  • Place chicken in a plastic bag set in shallow bowl. Pour marinade over chicken. Seal the bag; turn to coat chicken thights with marinade. Marinate in refrigerator for at leat 12 hours or up to 24 turning bag occasionally.
  • Drain chicken, discarding marinade
  • Preheat Grill, reduce heat to medium, adjust for indirect cooking.Cover and grill for 50 to 60 minutes or until no longer pink.
