Peanut Ginger Chicken W Fresh Peach Salsa Recipe
A nice way to dress up the regular back yard bbq chicken. Most of this recipe can be done a day ahead

  • 1/2 cup boiling water
  • 1/2 cup creamy peanut butter
  • 1/4 cup bottled chili sauce
  • 3 Tbsp soy sauce
  • 2 Tbsp cooking oil
  • 2 Tbsp vinegar
  • 4 Cloves garlic, minced
  • 1 Tbsp grated fresh ginger
  • 1/4 tsp cayenne pepper
  • 12 chicken thighs skinned(my wife likes boneless too)
  • 1 recipe fresh peach salsa ( recipe follows)
  • hot cooked rice (optional)
  • Peach Salsa
  • 1 cup chopped peeled peaches, pears, and plums
  • 1cup chopped seeded cucumber
  • 2Tbsp thinly sliced green onion
  • 2 Tbsp cilantro
  • 1 Tbsp sugar
  • 1 Tbsp each cooking oil and vinegar
  • Cover and Chill 1 to 2 hours. Makes about 2 cups

Directions
  1. For marinade, in small bowl gradually stir the boiling water into peanut butter(the mixture will stiffen at first) Stir in chili sauce, soy sauce,oil,garlic, vinegar,garlic, ginger and cayenne pepper; cool
  2. Place chicken in a plastic bag set in shallow bowl. Pour marinade over chicken. Seal the bag; turn to coat chicken thights with marinade. Marinate in refrigerator for at leat 12 hours or up to 24 turning bag occasionally.
  3. Drain chicken, discarding marinade
  4. Preheat Grill, reduce heat to medium, adjust for indirect cooking.Cover and grill for 50 to 60 minutes or until no longer pink.
