Don't defrost shrimp in a warm place or in the microwave. Do defrost shrimp in the refrigerator or in cold water.

Ingredients
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 1/2 cup (1 stick) butter
  • 2 to 3 pounds shrimp, peeled and deveined
  • 1 (10 ounce) can tomatoes with green chiles
  • 1 (10 ounce) can cream of mushroom soup
  • 2 (10 ounce) packages Mahatma yellow rice, cooked

Directions
  1. Saute bell pepper and onions in butter in a stockpot.
  2. Add the shrimp.
  3. SAute until the shrimp turn pink.
  4. Add the tomatoes with green chiles, soup and rice and mix well.
  5. Spoon into a baking dish.
  6. Bake at 350 degrees for 30 minutes.

I don't think it would matter if you used the brown rice.
