Enjoyable strawberry cheesecake alternative that even meat-eaters will enjoy ^_^
This recipe is a take-off from a cheesecake recipe found on a tofu box. Any berries may be used.

It's fool proof, really. My bf and I tried this with 2 types of tofu. The kind that won was Marjon's Soft Tofu (it's not horribly soft, and there is the plain cheesecake right on the box), and Nasoya Soft Tofu lost...big time. Marjon brand Soft Tofu is usually around the other chilled tofus in the grocers.

As I stated above, the best tofu to use is Marjon tofu. This is found in the veggie/cold tofu section usually, and the firm is ok to use, just be sure to use a good blender and blend it really well!! :)
1 tub of tofu is enough for a small pie, for a larger pie, you'll want to double the ingredients :)
