This is a slight variation on the traditional egg pasta by adding parsley. I would serve this is a side dish and only lightly buttered with maybe some garlic and parsley if you want to get fancy. To strong a sauce will overpower this pasta.

Ingredients
  • 3 eggs
  • 2 cups of flour
  • pinch of salt
  • 1/4C finely chopped parsley

Directions
  1. Follow directions on how to make normal egg pasta and just whisk the parsley into the egg before adding to the flour.
  2. (i.e. Combine flour and salt. Make a well and add the lightly whisked egg and parsley. Using your hands slowly bring the flour in to the egg until it forms a dough. If it is too sticky add a teaspoon of flour at a time, if it is too dry add a teaspoon of water. Knead for 7 minutes. Allow to rest for 20 minutes before rolling out.)
