Pesto Sauce

- 3/4 cups pine nuts or 1 cup walnuts (what you have available for nuts probably will do the trick) shopping list
- Lots of basil (about 2-3 ounces? or 1-2 cups) shopping list
- 5-7 cloves of garlic (I used 6 large) shopping list
- 1/2 tsp salt shopping list
- 1/4 cup parm/soy parm (nutritional yeast works too for those sensitive to soy) shopping list
- 2 oz any kind of tofu (or nut milks are ok for those sensitive to soy) shopping list
- 3/4 cup olive oil shopping list
How to make it
- Get out the food processor and one extra bowl
- Process the *nuts and *salt and place in extra bowl
- Process *garlic
- Add *basil to processor and process
- Add *nuts/salt mix and reprocess to combine, use spatula to ensure consistency
- Add in parmesan/parm replacement and process
- Add tofu, process same as above, using spatula to ensure consistency
- Add olive oil a bit at a time, ensure consistency
- Enjoy on pizza, stromboli, pasta, raw "pasta", etc. If eating raw, use raw tofu or a lesser amt of unsweetened raw nut (almond, walnut, etc) milk. Not an exact science as this recipe depends on your taste buds!
