Just a really nice bread,full of flavor and moist.

Ingredients
  • 3eggs
  • 1cup oil
  • 2 tsp.vanilla
  • 2cups grated zucchini
  • 2cups sugar
  • 2cups flour
  • 1 tsp baking soda
  • 1 tsp.salt
  • 1 tsp.cinnamon
  • 1/2 tsp.ginger
  • 1/2 tsp.nutmeg
  • 1 tsp.baking powder
  • 1/2 cup rolled oats(quick)
  • 1(3oz.)pkg.butterscotch pudding mix
  • 1 cup nuts or raisins or 1 cup dates
  • Lemon Frosting
  • 2 cups confectioner's sugar
  • 1/2 tsp.grated lemon peel
  • 2 tbls.lemon juice
  • 1/4 cup butter

Directions
  1. Mix bread ingredients.Pour into 2 greased ,floured,wax paper lined pans.
  2. Bake 1 hour at 350degrees.
  3. Blend ingredients for lemon frosting and spread over tops of loaves after cooled.
  4. Note*I baked in 2 8x4"pans and sprayed them with Baker's Joy.
  5. Since ovens vary,I started checking mine with toothpick,after about 45-50 mins.
  6. Cooled in pans about 15 mins.and turned out on rack to cool.
  7. I didn't use any of the fruit nor did I frost the loaves.
