Butterscotch Zucchini Bread

- 3eggs shopping list
- 1cup oil shopping list
- 2 tsp.vanilla shopping list
- 2cups grated zucchini shopping list
- 2cups sugar shopping list
- 2cups flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp.salt shopping list
- 1 tsp.cinnamon shopping list
- 1/2 tsp.ginger shopping list
- 1/2 tsp.nutmeg shopping list
- 1 tsp.baking powder shopping list
- 1/2 cup rolled oats(quick) shopping list
- 1(3oz.)pkg.butterscotch pudding mix shopping list
- 1 cup nuts or raisins or 1 cup dates shopping list
- lemon Frosting shopping list
- 2 cups confectioner's sugar shopping list
- 1/2 tsp.grated lemon peel shopping list
- 2 tbls.lemon juice shopping list
- 1/4 cup butter shopping list
How to make it
- Mix bread ingredients.Pour into 2 greased ,floured,wax paper lined pans.
- Bake 1 hour at 350degrees.
- Blend ingredients for lemon frosting and spread over tops of loaves after cooled.
- Note*I baked in 2 8x4"pans and sprayed them with Baker's Joy.
- Since ovens vary,I started checking mine with toothpick,after about 45-50 mins.
- Cooled in pans about 15 mins.and turned out on rack to cool.
- I didn't use any of the fruit nor did I frost the loaves.
