I love to bake cookies and love this combination of oats, nuts and chocolate.

Ingredients
  • 3/4 cup butter or margarine, softened
  • 1 cup packed brown sugar
  • 1/4 cup sugar
  • 1/4 cup splenda
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups quick-cooking oats
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup raisins
  • 3/4 cup walnuts or pecans - chopped
  • 1 cup mini chocolate chips, Reese's pieces, M&M's, carob chips, butterscotch chips... you get the idea. = )

Directions
  1. In a mixing bowl, cream butter and sugars. Beat in eggs and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture. Stir in raisins, nuts and candy. Scoop dough by tablespoonfuls and roll into a ball. Place dough balls 2 in. apart on greased baking sheets. Bake at 350° for 18-22 minutes or until golden brown. Remove to wire racks to cool.

Alterations


Thank you. Will try. I have issues with using splenda, so I'll use xylitol as a substitute. It's a low calorie natural sugar without the splenda issues. It is also safe for some of my diabetic friends.
