Baked Seafood Salsa Verde Recipe

Ingredients
  • 4 basa or orange roughey fillets, about ½ lb each
  • ½ lb imitation crab meat
  • 1 bunch cilantro, leaves only, coarsely chopped
  • 1 bunch green onions, sliced
  • 2 canned jalapeno peppers, seeds removed, chopped
  • juice of 1 lime
  • 2 t. finely chopped lime peel
  • 5 T. anejo tequila
  • 5 T. olive oil
  • 2 T. brown sugar (preferably light brown)
  • large pinch salt
  • jalapeno hot sauce to taste.

Directions
  1. To make the salsa Verde, combine the ingredients other than fish and crab and blend in a blender until smooth. Test for hotness. Add hot sauce if you like. In a large baking dish, pour half the salsa on the bottom. Put in imitation crab and arrange fish fillets on top. Add the rest of the sauce on top of that. Let sit 30 minutes while heating an oven to 350 degrees. Bake for 15-20 minutes until you can cut the fish cleanly with a knife. Serves 4.
