Baked Seafood Salsa Verde

- 4 basa or orange roughey fillets, about ½ lb each shopping list
- ½ lb imitation crab meat shopping list
- 1 bunch cilantro, leaves only, coarsely chopped shopping list
- 1 bunch green onions, sliced shopping list
- 2 canned jalapeno peppers, seeds removed, chopped shopping list
- juice of 1 lime shopping list
- 2 t. finely chopped lime peel shopping list
- 5 T. anejo tequila shopping list
- 5 T. olive oil shopping list
- 2 T. brown sugar (preferably light brown) shopping list
- large pinch salt shopping list
- jalapeno hot sauce to taste. shopping list
How to make it
- To make the salsa Verde, combine the ingredients other than fish and crab and blend in a blender until smooth. Test for hotness. Add hot sauce if you like. In a large baking dish, pour half the salsa on the bottom. Put in imitation crab and arrange fish fillets on top. Add the rest of the sauce on top of that. Let sit 30 minutes while heating an oven to 350 degrees. Bake for 15-20 minutes until you can cut the fish cleanly with a knife. Serves 4.
