Black Beans And Rice

- 1 pound soaked and cooked black beans (64 oz rinsed canned black beans could be substituted) shopping list
- 1 cup salsa (see my Fresh salsa Recipe) shopping list
- 1 large onion diced shopping list
- 3 medium tomatoes, diced shopping list
- 1/4 cup olive oil shopping list
- 2 tablespoons of chicken bouillon shopping list
- cooked brown rice. shopping list
How to make it
- Cook the beans, according to directions (see pressure cooking beans recipe, if necessary). Add salsa, onion, diced tomatoes, olive oil, and bouillon. Stir well. Boil down for 1/2 hour over medium heat, stirring occasionally, or pressure cook for 10 minutes.
- Serve over hot rice.
- Top with fresh salsa and Tabasco to individual taste.
