Garlicky White Bean Puree

- 3 cups drained cooked (or canned) white bean shopping list
- 1 cup bean cooking liquid or vegtable stock shopping list
- 4 cloves garlic - minced shopping list
- 3 tbsp olive oil - use the good stuff shopping list
- fresh rosemary & parsley shopping list
- salt & pepper to taste shopping list
How to make it
- Puree the beans in blender or with immersion blender
- Add garlic
- Add as much liquid as you need to make a smooth but not watery puree
- Place in microwave safe bowl (or nonstick sauce pan)
- Heat gently (75% power) until beans are hot
- Season w/ S&P
- Drizzle with EVOO
- Garnish w/rosemary & parsley
- Serve hot.
