Garlicky White Bean Puree Recipe
Excellent substitute for mashed potatoes. Unexpected side for any braised meat dish

Ingredients
  • 3 cups drained cooked (or canned) white bean
  • 1 cup bean cooking liquid or vegtable stock
  • 4 cloves garlic - minced
  • 3 tbsp olive oil - use the good stuff
  • fresh rosemary & parsley
  • salt & pepper to taste

Directions
  1. Puree the beans in blender or with immersion blender
  2. Add garlic
  3. Add as much liquid as you need to make a smooth but not watery puree
  4. Place in microwave safe bowl (or nonstick sauce pan)
  5. Heat gently (75% power) until beans are hot
  6. Season w/ S&P
  7. Drizzle with EVOO
  8. Garnish w/rosemary & parsley
  9. Serve hot.

I think this sounds great! I love my immersion blender and this is a perfect reason to use it.
