Dijon Egg And Bagel Sandwich Recipe
Better than McDonald's McMuffin and tastier too.

Ingredients
  • 2 bagels, halved
  • 2 eggs
  • 1 tablespoon sliced scallions
  • 1/8 tablespoon basil leaves
  • salt and pepper to taste
  • Butter, about 1 tablespoon
  • 2 lettuce leaves
  • 2 slices Canadian bacon
  • 2 teaspoons dijon mustard
  • 2 teaspoons mayonnaise
  • 2 slices sharp cheddar cheese
  • 2 slices tomato

Directions
  1. Broil bagel halves 6-inches from heat for 1-3 minutes so the sliced part is lightly toasted but the rest of the bagel is soft and chewy.
  2. In a bowl, combine the eggs, scallions, basil, salt and pepper.
  3. Melt butter in a skillet over medium heat.
  4. Add Canadian bacon.
  5. Cook for about 1 minute on each side until hot, remove from skillet.
  6. Add egg mixture to skillet.
  7. Cook until eggs are just-about thoroughly cooked and add cheese slices.
  8. Cover and allow cheese to melt.
  9. Spread each bagel with 1 teaspoon dijon mustard and 1 teaspoon mayonnaise.
  10. Top each bagel half with lettuce leaf, one slice Canandian bacon, one slice tomato and 1/2 the egg mixture with cheese.
  11. Top with remaining bagel half.
