Apricot Jam Recipe
This is my grandmother's recipe - there was a time when anything we ate we either grew or made from scratch - Ode to the day!

Ingredients
  • 8 cups apricots pitted (sent through the food processor)
  • 4 1/2 cups sugar
  • 3/4 cup brown sugar
  • 1 orange
  • 1 cup crushed pineapple
  • 1/8 tsp salt
  • 1 pkg lemon jello

Directions
  1. Wash, pit and quarter about 3lbs of apricots. Coarsely chop in food processor.
  2. Place apricots, sugars, grated rind of the orange and the juice of the orange, pineapple and salt in pot.
  3. Bring to boil, stirring until sugar is dissolved.
  4. coook rapidly, keeping the boil, stirring constantly, until jam stage is reached (about 30-35 minutes).
  5. Add jello and laddle into sterilized jars. Makes 5 pints.
