Ingredients
  • 150g butter, melted
  • 200g soft light brown sugar
  • 115g carrots, peeled & finely grated
  • 50g dessert apples, peeled & finely grated (red apples)
  • pinch of salt
  • 1-2tsp ground mixed spice
  • 2 size 3 eggs (I used medium size eggs)
  • 200g self-raising flour
  • 2tsp baking powder
  • 115g walnuts, finely chopped (I used nib almonds)

Directions
  1. 1. Preheat oven to 180C. Arrange 24 fairy cake paper cases in bun tins and put to one side.
  2. 2. Place butter, sugar, carrots, apples, salt,nixed spice and eggs in a mixing bowl and beat well to combine.
  3. 3. Sift together the flour and baking powder into a small bowl, the sift again into the mixing bowl. Add chopped walnut and fold in until evenly blended.
  4. 4. Fill the paper cases half full with the cake mixture, then bake for 20-25 minutes, or until a skewer inserted into the centres of the cakes come out cleans.
  5. 5. Leave the cakes in the tins for about 5 minutes, before transferring themto a wire rack to cool completely.

Hi... Thanks for dropping by... Do try the biscotti... About the mixed spice, I bought the one sell in supermarket. I'm not sure what are the spices.
