How to make it

  • 1. Preheat oven to 180C. Arrange 24 fairy cake paper cases in bun tins and put to one side.
  • 2. Place butter, sugar, carrots, apples, salt,nixed spice and eggs in a mixing bowl and beat well to combine.
  • 3. Sift together the flour and baking powder into a small bowl, the sift again into the mixing bowl. Add chopped walnut and fold in until evenly blended.
  • 4. Fill the paper cases half full with the cake mixture, then bake for 20-25 minutes, or until a skewer inserted into the centres of the cakes come out cleans.
  • 5. Leave the cakes in the tins for about 5 minutes, before transferring themto a wire rack to cool completely.

    Hi... Thanks for dropping by... Do try the biscotti... About the mixed spice, I bought the one sell in supermarket. I'm not sure what are the spices.
