Autumn Passionettes

- 150g butter, melted shopping list
- 200g soft light brown sugar shopping list
- 115g carrots, peeled & finely grated shopping list
- 50g dessert apples, peeled & finely grated (red apples) shopping list
- pinch of salt shopping list
- 1-2tsp ground mixed spice shopping list
- 2 size 3 eggs (I used medium size eggs) shopping list
- 200g self-raising flour shopping list
- 2tsp baking powder shopping list
- 115g walnuts, finely chopped (I used nib almonds) shopping list
How to make it
- 1. Preheat oven to 180C. Arrange 24 fairy cake paper cases in bun tins and put to one side.
- 2. Place butter, sugar, carrots, apples, salt,nixed spice and eggs in a mixing bowl and beat well to combine.
- 3. Sift together the flour and baking powder into a small bowl, the sift again into the mixing bowl. Add chopped walnut and fold in until evenly blended.
- 4. Fill the paper cases half full with the cake mixture, then bake for 20-25 minutes, or until a skewer inserted into the centres of the cakes come out cleans.
- 5. Leave the cakes in the tins for about 5 minutes, before transferring themto a wire rack to cool completely.
