Onion Vegetarian Enchiladas Recipe
This is a recipe I obtained from a buno teammate last night. She served these at her party along with pico de gallo, guacamole, beef fajitas and peach margaritas. The meal was fabulous and everyone ased for this recipe. It's really good. Enjoy

Ingredients
  • 1 jumbo yellow onion chopped
  • 16 ounce can pinto beans drained
  • 16 ounce can navy beans drained
  • 16 ounce can garbanzo beans drained
  • 1 can cheddar cheese soup
  • 10 ounce can enchilada sauce
  • 8 ounce can tomato sauce
  • 16 corn tortillas
  • 2 cups grated cheddar cheese
  • Tomatoes for garnish
  • Olives for garnish
  • Sour cream for garnish

Directions
  1. Heat oven to 350.
  2. Stack tortillas then wrap in foil and heat 10 minutes.
  3. Combine beans, onion and soup then spoon 1/3 cup on each tortilla.
  4. Roll up and arrange seam side down in rectangular pan.
  5. Stir sauces together and pour over enchiladas then cover with foil and bake 30 minutes.
  6. Remove foil and sprinkle with cheese then bake 5 minutes more.
  7. Serve with garnishes as desired.
