Khichdi W Grilled Veggies Recipe
This dish is the perfect "last minute fix" for dinner. You will probably have most ingredients in your pantry and you don't even have to do much!

Ingredients
  • Vegetables:
  • 2 small potatoes
  • 1 big red onion
  • 2 garlic cloves
  • 1 frozen vegetable pack (Birds Eye) (thawd out)
  • 1 jalapeno pepper (hot)
  • Condiments:
  • 1 tsp peppercorns (whole)
  • 1/2 stick cinnamon
  • 1 tsp cloves
  • 1 tsp cumin
  • 1/2 tsp asafoetida (optional)
  • 1 tsp turmeric
  • 1 tsp coriander/cumin powder (dhanajeeru)
  • salt to taste
  • 1 tbsp vegetable oil
  • Main ingredients
  • 1 cup of basmati rice
  • 1 cup of lentils (toovar dal)
  • Tools
  • PRESSURE COOKER

Directions
  1. Wash and soak rice and toovar dal in a big bowl (in 4 cups water) and set aside. Usually 10 minutes is maximum you will need.
  2. Dice all vegetables and set aside.
  3. In a medium/large sized pressure cooker, heat the oil.
  4. Add jeera, and when it sizzles, add asaefoetida.
  5. Add sliced jalapenos and garlic. Let them sizzle (~1-2 minutes).
  6. Add onions and cook them for 2-3 minutes.
  7. Add potatoes and rest of the veggies.
  8. Cook for 4-5 minutes and add the spices (all the condiments).
  9. Let them heat up with the rest of the veggies.
  10. Add the rice and toovar dal without water.
  11. Now add 6 cups of water and bring to a boil.
  12. Cover the lid, put on the whistle and let it whistle 4 times (4 whole ones).
  13. Let it cool and mix the khichdi.
  14. You are in for a treat.
  15. Serve with fresh yogurt (sweet or salted).
