Khichdi w grilled veggies

- Vegetables: shopping list
- 2 small potatoes shopping list
- 1 big red onion shopping list
- 2 garlic cloves shopping list
- 1 frozen vegetable pack (Birds Eye) (thawd out) shopping list
- 1 jalapeno pepper (hot) shopping list
- Condiments: shopping list
- 1 tsp peppercorns (whole) shopping list
- 1/2 stick cinnamon shopping list
- 1 tsp cloves shopping list
- 1 tsp cumin shopping list
- 1/2 tsp asafoetida (optional) shopping list
- 1 tsp turmeric shopping list
- 1 tsp coriander/cumin powder (dhanajeeru) shopping list
- salt to taste shopping list
- 1 tbsp vegetable oil shopping list
- Main ingredients shopping list
- 1 cup of basmati rice shopping list
- 1 cup of lentils (toovar dal) shopping list
- Tools shopping list

How to make it
- Wash and soak rice and toovar dal in a big bowl (in 4 cups water) and set aside. Usually 10 minutes is maximum you will need.
- Dice all vegetables and set aside.
- In a medium/large sized pressure cooker, heat the oil.
- Add jeera, and when it sizzles, add asaefoetida.
- Add sliced jalapenos and garlic. Let them sizzle (~1-2 minutes).
- Add onions and cook them for 2-3 minutes.
- Add potatoes and rest of the veggies.
- Cook for 4-5 minutes and add the spices (all the condiments).
- Let them heat up with the rest of the veggies.
- Add the rice and toovar dal without water.
- Now add 6 cups of water and bring to a boil.
- Cover the lid, put on the whistle and let it whistle 4 times (4 whole ones).
- Let it cool and mix the khichdi.
- You are in for a treat.
- Serve with fresh yogurt (sweet or salted).
