How to make it

  • Wash and DRY okra pods ( it is very important to get the pods dry otherwise when you slice the okra it will get slimy on you)
  • Cut the stem part from the pod and discard. Slice the pod in 1/8 inch slices all the way to the end...unless the end it tough
  • In a large bowl mix the diced tomato with the okra
  • Add the cornmeal, salt and pepper stir unitl the vegetables are coated
  • Heat 1/2 cup of oil in a large non -stick skillet. When the oil is heated very carefully add the okra mixture. Do not add the cornmeal from the bottom of the bowl! Turn the heat to medium
  • Fry gently for about 25 minutes.
  • You will need to stir the okra around every 5-7 minutes so that it doesn't burn. Add more oil as needed.
  • The okra and tomatoes are ready when they are golden brown and crispy
  • Line a serving bowl with paper towels and put the okra and tomatoes in the bowl
  • Serve right away

    Me too Rosemaryblue! The okra in my garden is pooped out and you can't get good fresh okra at the grocery store. I hate having to wait until next summer.
