Fried Okra and Green Tomatoes

- 2 lbs fresh home-grown okra ( pods should be smaller than 5 inches) shopping list
- 1 medium green tomato diced in 1/2 inch cubes shopping list
- 1/2 cup cornmeal mix shopping list
- 1/2 cup to 1 cup vegetable oil shopping list
- 1/4tsp. salt shopping list
- freshly ground pepper to taste shopping list
How to make it
- Wash and DRY okra pods ( it is very important to get the pods dry otherwise when you slice the okra it will get slimy on you)
- Cut the stem part from the pod and discard. Slice the pod in 1/8 inch slices all the way to the end...unless the end it tough
- In a large bowl mix the diced tomato with the okra
- Add the cornmeal, salt and pepper stir unitl the vegetables are coated
- Heat 1/2 cup of oil in a large non -stick skillet. When the oil is heated very carefully add the okra mixture. Do not add the cornmeal from the bottom of the bowl! Turn the heat to medium
- Fry gently for about 25 minutes.
- You will need to stir the okra around every 5-7 minutes so that it doesn't burn. Add more oil as needed.
- The okra and tomatoes are ready when they are golden brown and crispy
- Line a serving bowl with paper towels and put the okra and tomatoes in the bowl
- Serve right away
