Fried Okra And Green Tomatoes Recipe

Okra and green tomatoes work wonderful together in this traditional dish from the south.

Ingredients
- 2 lbs fresh home-grown okra ( pods should be smaller than 5 inches)
- 1 medium green tomato diced in 1/2 inch cubes
- 1/2 cup cornmeal mix
- 1/2 cup to 1 cup vegetable oil
- 1/4tsp. salt
- freshly ground pepper to taste
Directions
- Wash and DRY okra pods ( it is very important to get the pods dry otherwise when you slice the okra it will get slimy on you)
- Cut the stem part from the pod and discard. Slice the pod in 1/8 inch slices all the way to the end...unless the end it tough
- In a large bowl mix the diced tomato with the okra
- Add the cornmeal, salt and pepper stir unitl the vegetables are coated
- Heat 1/2 cup of oil in a large non -stick skillet. When the oil is heated very carefully add the okra mixture. Do not add the cornmeal from the bottom of the bowl! Turn the heat to medium
- Fry gently for about 25 minutes.
- You will need to stir the okra around every 5-7 minutes so that it doesn't burn. Add more oil as needed.
- The okra and tomatoes are ready when they are golden brown and crispy
- Line a serving bowl with paper towels and put the okra and tomatoes in the bowl
- Serve right away

Us southerns love fried okra lol this sounds real good. You taught me something about slimmy okra, thanks for that hint and the recipe.

Me too Rosemaryblue! The okra in my garden is pooped out and you can't get good fresh okra at the grocery store. I hate having to wait until next summer.
