REAL Onion Dip

- 2 tablespoons vegetable oil shopping list
- 2 medium-large onions, 3 cups, chopped shopping list
- 3/4 cup mayonnaise shopping list
- 3/4 cup sour cream shopping list
- salt and pepper to taste shopping list
- chives, finely chopped shopping list
- 4 ounces Roquefort cheese, optional shopping list
- Dippers: baguette slices, potato chips, preztzels, crudités shopping list
How to make it
- Heat the oil in a large skillet over medium-low heat.
- Add the onions, cover and cook until golden, stirring occasionally, about 20 minutes.
- Uncover and continue to cook, stirring often for 15 minutes more.
- Cool completely.
- Mix mayonnaise and sour cream in a bowl. If using, add mashed Roquefort cheese to this mix and mix well.
- Add cooled onions.
- Season with salt and pepper.
- Cover and refrigerate from 2 hours to 2 days.
- If refrigerating for longer than 8 hours, you may need to add milk to thin it a bit.
- Sprinkle with chopped chives and serve with dippers.
