How to make it

  • Heat the oil in a large skillet over medium-low heat.
  • Add the onions, cover and cook until golden, stirring occasionally, about 20 minutes.
  • Uncover and continue to cook, stirring often for 15 minutes more.
  • Cool completely.
  • Mix mayonnaise and sour cream in a bowl. If using, add mashed Roquefort cheese to this mix and mix well.
  • Add cooled onions.
  • Season with salt and pepper.
  • Cover and refrigerate from 2 hours to 2 days.
  • If refrigerating for longer than 8 hours, you may need to add milk to thin it a bit.
  • Sprinkle with chopped chives and serve with dippers.

    Oh, the roquefort cheese will NOT be optional for me - that flavor should really top this off for me. Great new dip idea to try - thanks, jaie!

    Yummo. Sounds fabulous. Thanks for posting. I'm always looking for great dip recipes since I do a lot of catering and throw a lot of parties. Can't wait to try this one.
