Normal, traditional lassi is much much too salty for me, which is why this one is exquisitely perfect for my taste.

The Coconut acts as a catalyst and prevents the Yogurt from curdling.

In addition, plain yogurt doesn't really curdle that much with lime to begin with.

normally. but at this quantity it won't affect it that much, it will give it the right texture.
