Hot Stuff Tomato Onion Relish From Church Friend Recipe Chefmeow / All my dishes

This is a recipe I obtained from a church friend. She makes these by the dozens when her garden comes in. I have not personally made this because she keeps me well supplied, but speaking first hand, this is an awesome relish.

Ingredients
  • 8 medium tomatoes peeled and cut 1/8's
  • 4 large yellow onions peeled and sliced thin
  • Dressing:
  • 3/4 cup apple cider vinegar
  • 3/4 cup hot water
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground red pepper

Directions
  1. Combine all dressing ingredients and stir well to combine.
  2. Peel tomatoes and cut into quarter size pieces.
  3. Peel onions and cut cross ways into thin slices then add to tomatoes.
  4. Add dressing mixture then start cooking and continue cooking over medium heat.
  5. Stir as it heats to break up onion slices.
  6. As it heats add salt and pepper and stir gently.
  7. Cook for 35 minutes then allow to cool slightly and put in glass jars.
  8. Seal and refrigerate.
