Shrimp And Spinach Pasta With Creamy Red Sauce Recipe

Ingredients
  • 16 shrimp
  • Olive oil
  • 2 handfuls fresh baby spinach
  • 2 cans stewed tomatoes
  • 8 ounce package cream cheese cut up
  • 2 cloves minced garlic
  • 1 teaspoon basil
  • 1 pound mushrooms sliced
  • 1/2 cup sliced black olives
  • 3 green onions finely chopped
  • 1/4 teaspoon freshly ground black pepper
  • 16 ounces bow tie pasta

Directions
  1. Sauté shrimp in large frying pan with olive oil.
  2. Add garlic and let cook just until garlic begins to brown then add tomatoes, mushrooms, olives, green onions, cream cheese, basil and pepper.
  3. Reduce heat to medium low and let simmer stirring occasionally.
  4. Start boiling the noodles and when almost done add spinach to water and continue cooking until pasta is done.
  5. When cream cheese has melted and sauce is creamy add pasta and spinach to pan and stir.
  6. Serve immediately.
