Shades Of Italy Salad Recipe
I love this salad, absolutely love it. It comes from my catering partner who often serves this at many functions he caters and we definitely serve it when we cater events together. It is loved by all.

Ingredients
  • A small jar sliced mushrooms drained
  • 14 ounce can artichoke hearts drained and quartered
  • 6 ounce can pitted ripe olives drained and halved lengthwise
  • 3 green onions with tops sliced
  • 2/3 cup pepperoncini sliced (reserve juice)
  • 6 ounces summer sausage cut into small pieces
  • 4 ounces sliced pepperoni halved
  • 3/4 cup finely shredded Mozzarella cheese
  • 1/4 cup balsamic vinegar
  • 1/4 cup virgin olive oil
  • 2 tablespoons juice from the pepperoncini
  • 3/4 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Directions
  1. In large mixing bowl combine mushrooms, artichoke hearts, olives, green onions, pepperoncini, summer sausage, pepperoni and Mozzarella cheese then toss to coat.
  2. In a small deep mixing bowl combine vinegar, olive oil, pepperoncini juice, Italian seasoning, salt and pepper then stir to blend well.
  3. Pour over ingredients in large mixing bowl and toss to coat all.
  4. Cover and refrigerate at least 1 hour.
