Mrs Klappers Minestrone

- 1/4 cup olive or vegetable oil shopping list
- 1 clove garlic, minced shopping list
- 1/2 cup onion, diced shopping list
- 2 stalks celery with leaves, chopped shopping list
- 2 medium carrots, peeled and diced shopping list
- 1 (16 ounce) can diced tomatoes, undrained shopping list
- 3 beef bouillon cubes shopping list
- 2 cups potatoes, peeled and diced shopping list
- 1 cup cabbage, chopped shopping list
- 3 tablespoons fresh parsley, minced shopping list
- 2 teaspoons salt, or to taste shopping list
- 1/4 teaspoon ground black pepper shopping list
- 1 teaspoon italian seasoning shopping list
- 1 cup ditalini pasta, uncooked shopping list
- 1 can chick peas, drained and rinsed shopping list
- 1 can kidney beans, drained and rinsed shopping list
- parmesan cheese, grated shopping list
How to make it
- In Dutch oven, saute garlic, onion and celery in oil.
- Add vegetables, bouillon cubes and seasonings.
- Add 6 cups water.
- Bring to a boil. Reduce heat and simmer 20 minutes.
- Add pasta, chick peas and kidney beans.
- Return to a boil.
- Reduce heat and simmer 20 minutes.
- Ladle into bowls and sprinkle with Parmesan cheese.
