Onion Marmalade Recipe
A savory jam perfect for gifting at the holidays. It is great with roasted meats and poultry.

Ingredients
  • 6 large sweet onions, thinly sliced
  • 3 cups sherry or red wine vinegar (I use the vinegar)
  • 3 cups granulated sugar
  • 2 to 4 bay leaves
  • 20 black peppercorns, cracked

Directions
  1. In large pot, combine ingredients.
  2. Over low heat, simmer until almost all the liquid is evaporated and onions are softened.
  3. Remove from heat and cool.
  4. Pack in glass jars and chill.
  5. Will keep 4 to 6 months (but here it never lasts that long!)
