Onion Marmalade

- 6 large sweet onions, thinly sliced shopping list
- 3 cups sherry or red wine vinegar (I use the vinegar) shopping list
- 3 cups granulated sugar shopping list
- 2 to 4 bay leaves shopping list
- 20 black peppercorns, cracked shopping list
How to make it
- In large pot, combine ingredients.
- Over low heat, simmer until almost all the liquid is evaporated and onions are softened.
- Remove from heat and cool.
- Pack in glass jars and chill.
- Will keep 4 to 6 months (but here it never lasts that long!)
