Margarita Pie With Pretzal Crust Recipe
Friends served us this pie while on vacation at Hilton Head Island. Everyone raved about it;

Ingredients
  • 1 stick corn-oil margarine
  • 1 1/4 cups crushed (about 5 ounces) pretzels
  • 1 tablespoon sugar
  • 1 1/2 quarts vanilla ice cream, slightly thawed
  • 3 ounces frozen limeade concentrate, thawed
  • 2 ounces gold tequila
  • 1/2 ounce Cointreau (orange liqueur)
  • 1 whole lime, grated and juiced, plus 1 lime for garnish
  • Fresh Mint optional

Directions
  1. Melt margarine
  2. Crush pretzels in food processor
  3. Stir crushed pretzels and sugar into melted margarine, mix well
  4. Press mixture firmly into sides and bottom of pan.
  5. Freeze 1 hour
  6. Combine ice cream, limeade, tequila, Cointreau, grated lime peel and lime juice in a mixer, preferablly with a whip attachment
  7. Whip at meduim speed until well-mixed
  8. Filling should be thick
  9. Pile into crust
  10. Freeze at least 4 hours until firm
  11. Garnixh pie with thin slices of lime, lime-peel curls and fresh mint
