Butterscotch Squares Recipe
When you can't decide between smooth and crunchy, this is the dessert for you. It's worth the work!

Ingredients
  • 1 c all purpose flour
  • 1/2 c butter
  • 1 c slivered blanched almonds, chopped
  • 3/4 c icing sugar + 2 tbsp
  • 1 8oz pkg cream cheese
  • 2 c heavy or whipping cream
  • 1 tsp vanilla
  • 2 pkg butterscotch instant pudding mixes (4 serving size)
  • 3 c milk

Directions
  1. About 6 hours before serving or day ahead :
  2. Mix flour, butter, 2/3 c chopped almonds, and 1/4 c icing sugar until crumbly.
  3. Pat into ungreased 9x13 baking pan.
  4. Bake 15-20 minutes until golden brown.
  5. Cool in pan on rack.
  6. Beat cream cheese and 1/2 c icing sugar until fluffy.
  7. In another bowl beat whipping cream and vanilla until stiff peaks form.
  8. Fold 1 cup whipped cream into cream cheese mixture.
  9. Spread over cooled crust.
  10. Reserve remaining whipped cream.
  11. In another large bowl, prepare pudding mixes as directed but use 3 c milk total.
  12. Spread over cream cheese layer.
  13. Fold 2 tbsp icing sugar into remaining whipped cream then spread over pudding.
  14. Chill at least 4 hours.
  15. While dessert is chilling toast remaining almonds then let cool.
  16. Sprinkle over chilled dessert and cut into squares.

Oh yumm! We call this Sex in a Pan. I've also done it where I've used all chocolate pudding or a layer of chocolate and a layer of butterscotch. So, so good!!!
