Vegan Apple-Raspberry Cornbread Recipe
A sweet and fruity tender white cornbread with a raspberry ribbon through the middle!

Ingredients
  • 1 C. white cornmeal
  • 1 C. whole-wheat flour
  • 1 C. peeled, diced apple
  • 1/3 C. brown sugar
  • 4 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp ground cloves
  • 1 ¼ C. soy milk
  • 1 tsp. vinegar
  • 3 T. applesauce
  • ½ c. pure raspberry jam

Directions
  1. Preheat oven to 425F.
  2. Mix together cornmeal through cloves in a large bowl.
  3. Separately, whisk soy milk, vinegar and applesauce.
  4. Stir into dry ingredients until just combined.
  5. Put one half of the batter in a greased 9 inch square pan.
  6. Top batter with jam, cover with remaining batter.
  7. Bake 25 minutes.
  8. Allow to cool slightly before cutting and serving
