Spinach Stawberry Chicken Salad

This is wonderfull for lunch and you can use left over chicken or even buy a deli chicken to use. Can also add a touch of a more unusual cheese if you like. Try it with blue cheese crumbles or gorgonzola.
Ingredients
- For the dressing shopping list
- 3 tablespoons apple juice shopping list
- 2 tablespoons strawberry fruit spread shopping list
- 2 tablespoons balsamic vinegar shopping list
- For the Salad shopping list
- 1 and 1/4 pounds boneless skinless chicken breast or chicken tenders shopping list
- 8 cups torn into bite sized pieces spinach shopping list
- 1 cup strawberries hulled and cut in half shopping list
- 1/4 cup chopped walnuts shopping list
How to make it
- For the dressing
- mix all ingredients together and set aside
- For the salad
- Spray an 8 to 10 inch skillet with non stick spray
- heat over meduim/high heat
- cook chicken 15 to 20 minutes until juices run clear and center is no longer pink
- remove chicken to cutting board
- Add dressing to skillet and stir to loosen any pan drippings just heat through.
- remove dressing from heat
- cut chicken into slices or bite size pieces
- arrange spinach on serving plates
- top with chicken and strawberries
- drizzle with dressing
- top with walnuts
- enjoy
