How to make it

  • Peel pit and dice the avocado in a small bowl
  • toss diced avocado with 1 tablespoon of the lime juice
  • cover until needed
  • in a medium bowl combine shrimp, taco seasoning, garlic and 2 tablespoons of lime juice
  • heat oil in a large skillet over medium high heat until hot
  • Add shrimp mixture to skillet
  • cook and stir 3 to 4 minutes until the shrimp turn pink
  • remove shrimp from skillet to a warm plate
  • cook remaining juices for an additional 3 to 4 minutes until thickened
  • return shrimp to skillet and stir to cook in thickened juices spoon shrimp mixture into warmed taco shells
  • top with the lettuce avocado tomatoe and salsa

    That sounds like a shrimp taco I could fall in love with - must try this one soon...we love seafood tacos. I like a little chipotle mayo drizzled over them. Great, easy, tasty post - thank you!
