Spicy Parmesan Shortbread Recipe
These shortbreads go really well with creamy soups or chowders! Melt in your mouth! (You can make them as spicy as you like.)

Ingredients
  • 1 1/2 c flour
  • 1/4 c corn starch
  • 1/2 c cold butter, cubed
  • 1 tbsp fresh thyme finely chopped
  • 1/2 tsp cayenne pepper
  • 1 c grated parmesan cheese
  • 1/2 c sour cream (do not use light or fat-free)
  • 1 tbsp milk
  • 1 - 2 tsp coarse black pepper

Directions
  1. Combine flour, butter, cheese, cornstarch, cayenne, and thyme in a bowl with a pastry knife until it resembles small crumbs.
  2. Add sour cream and combine.
  3. Divide the dough in half.
  4. Form each into a 2 inch wide log and flatten to about 1/2 inch thick.
  5. Refrigerate overnight.
  6. Slice the logs into 1/2 inch pieces and arrange on baking sheets that are covered with parchment paper.
  7. Brush the top of each with milk and sprinkle with pepper.
  8. Bake at 325 degrees for about 25 minutes or until golden brown.
