Rummy Baked Beans

- 2 pounds dried pea beans shopping list
- 1 onion stuck with 3 cloves shopping list
- 1 tablespoon salt shopping list
- 3/4 pound lean salt pork shopping list
- 3/4 pound smoked ham shopping list
- 3 white onions chopped shopping list
- 3 cloves garlic minced shopping list
- 2 teaspoons dry mustard shopping list
- 1/4 cup dark rum shopping list
How to make it
- Cover beans with water and soak overnight.
- Drain and add fresh water to 3” above beans.
- Add onion with cloves and salt then boil 5 minutes.
- Skim reduce heat and simmer 30 minutes.
- Put salt pork in water and bring to a boil then lower heat and simmer 30 minutes.
- Remove pork and cut in small pieces.
- Cut smoked ham in julienne strips.
- Blend mustard with a little of the bean liquid.
- Place a layer of beans in the bottom of a large baking dish.
- Add a layer of pork, ham, onion and garlic.
- Repeat layers ending with beans on top.
- Add mustard mixture and enough bean liquid to come to the top of the baking dish.
- Bake at 300 for 4 hours adding more liquid if necessary.
- Remove from oven and pour rum over beans.
- Return to oven and bake another 45 minutes.
