Ingredients

How to make it

  • Heat oil in slillet over medium high heat
  • Add onion and bell pepper cook stirring ocassionally until tender
  • Stir in beans,corn, fajita seasoning and water
  • Bring to a boil
  • Reduce heat to low
  • Cook uncovered for 3 to 4 minutes until mixture thickens
  • Remove from heat and stir in cilantro
  • Serve with the warmed tortillas

    Just made this for dinner. Turned out great! I didn't use beans cuz I didn't have any. But next time I'll add some refried beans to this!

    I never considered using beans in a fajita, but that does sound pretty darned tasty -- and a lot cheaper than the vegetarian "chicken" strips that I normally use. A keeper! Thanks for posting!
