This dish combines the sweetness of of ruby red grapefruits, the smooth texture of avocado, and the tanginess of a simple vinaigrette. My husband isn't a big salad eater, but he loves this one!

Ingredients
  • 2 ruby red grapefruit, segments sliced withpith removed
  • 8 cups of mixed greens, baby spinach, or watercress (with big stems discarded)
  • 1 avocado, pitted, peeled, and sliced lengthwise and crosswise
  • 1 tsp balsalmic vinegar
  • 1 tsp sugar
  • 1 tbsp olive oil
  • salt and pepper to taste

Directions
  1. Whisk together vinegar, sugar, oilve oil, salt, and pepper in a small bowl.
  2. Toss with greens.
  3. Top with avocado and grapefruit.
