Ingredients
  • 2 1/4 lbs of cod fillets, fairly thick
  • 1/2 to 3/4 cup of mayonnaise, good quality
  • 1/2 to 3/4 cup of chopped pecans (ummmm, don't bother toasting in butter) and only if you are completely patient, pistachios (oh, the shelling!)
  • 2 tablespoons of horseradish, scant amount
  • 1/4 teaspoon of turmeric
  • 1/4 teaspoon of salt
  • olive oil or butter (use those saved butter wrappers in your freezer)

Directions
  1. Preheat oven to 400 degrees.
  2. Double wrap a cookie sheet with foil. LIghtly oil with a mild flavored oil or coat with a scant amount of butter.
  3. Place cod fillets on prepped pan.
  4. Mix mayonnaise, nuts, horseradish, and turmeric, and salt. Spread over the fish.
  5. Bake in hot oven for twenty minutes, until golden brown on top and bubbly. Serve with lemon wedges and cracked black pepper.
