How to make it

  • Preheat oven to 350.F
  • Butter a 2-quart shallow casserole.
  • drain chiles, rinse or scrape out seeds and cut into 1 inch strips.
  • Arange chiles in the bottom of the casserole.
  • Top chiles with the two cheeses, spreading each evenly.
  • Mix eggs, flour, milk, salt and pepper until smooth.
  • Pour egg mixture over the cheese evenly.
  • Bake at 350.F for 35 to 40 minutes until puffed and slightly golden.
  • Serve immediately with guacamole and sour cream .

    gotta love any recipe with green chilis. got a big bag of roasted Hatch green chilis in the fridge just waiting to go into recipes like this. thanks!
