Ingredients
  • 4 fish fillets (halibut, red snapper, scrod or other firm fish, should be kind of thick)
  • 1 teaspoon cumin
  • 1tablespoon paprika
  • 1/2 yeaspoon sugar
  • Salt to taste
  • 1 bunch cilantro or parsley, stemmed and chopped
  • 1 fresh hot green chile pepper, seeded and chopped
  • 2 cloves garlic, minced or crushed
  • 1 tablespoon chopped ginger root
  • 1/4 cup fresh lemon juice
  • 1/2 cup oil

Directions
  1. Wash fish and pat dry with paper towels. Lightly score fish. Place in shallow dish. Set aside.
  2. Mix together remaining ingredients,except oil. Process in food processor. Remove. Stir in oil until blended.
  3. Pour marinade over fish, turning to coat. Marinate for 1 hour.
  4. Remove fish from marinate.
  5. Grill over hot coals,6 to 10 minutes on each side, basting with the marinade until fish is done (time will depend on thickness of fish)

Not a big fish eater but tried it was very nice will do it again
