Salmon And Broccoli Muffins

- 6 ounces salmon fillet shopping list
- 1/2 cup organic silken tofu medium firmness shopping list
- 1 teaspoon grated ginger root shopping list
- 1 teaspoon your favorite fresh herb dill, thyme, basil or a store bought citrus herb blend shopping list
- 1/4 cup fresh parsely very finely chopped shopping list
- 1/2 tsp lemon zest shopping list
- 1/2 tsp minced garlic shopping list
- 1/4 tsp red pepper flakes (optional) shopping list
- 1 teaspoon Dijon mustard shopping list
- 1 cup of steamed broccoli shopping list
- salt and pepper to taste shopping list
How to make it
- Steam the broccoli to el dente fork touchable. Remove from heat and set aside.
- In your food processor combine your salmon cut into 3 inch cubes, tofu and remaining ingredients (except the broccoli). Blend till mixed not pureed (salmon should be recognizable but not in huge pieces). Remove from the processer and set in a bowl.
- Place the broccoli into the processer and give a few pluses, no large pieces should be remaining your want it to look like bread crumbs a little. Mix with your ingredients.
- Take your muffin tins and line with parchment paper or you can grease the sides and bottom (less calories with parchment paper), divide your salmon mixture into four of the muffin cups and bake at 350 for 12 minutes. Remove from oven and allow to rest for a few minutes before removing. There may be some liquids depending on the firmness of your tofu.
- May be served as a side dish or on top of a salad, or add some carmlized onions with a nice rice dish and you have a great dinner.
