Southwestern-Style Steak

- 1 1/2 lbs. flank steak or London broil, trimmed shopping list
- ***FOR THE MARINADE*** shopping list
- 1 cup fresh lime juice (about 8 limes) shopping list
- 1 medium red onion, thinly sliced (about 1 cup) shopping list
- 1 tablespoon chopped fresh cilantro or parsley shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon crushed red pepper flakes shopping list
- 1 clove garlic, minced shopping list
How to make it
- To prepare marinade, in a shallow glass dish, combine lime juice, onion, cilantro, salt, and red pepper flakes. Mix well.
- Rub garlic over both sides of steak. Place steak in marinade; turn to coat. Cover dish with plastic wrap; refrigerate for 2 hours.
- Preheat broiler. Line broiler pan with foil.
- Remove steak from marinade. Discard marinade in dish. Place steak on prepared pan.
- Broilsteak 4 to 5 minutes per side for medium, 6 to 7 minutes per side for well done.
- Place steak on carving board or platter. Let stand for 10 minutes before cutting across the grain into thin slices.
