Gluten Free Yellow Cake

- 8 TBSP. (1 stick) unsalted butter, softened shopping list
- 1 cup sugar shopping list
- 4 eggs separated, + one egg white shopping list
- 1/2 cup cold water shopping list
- 1 teasp. vanilla extract shopping list
- 2 cups Wendy Wark's gluten-free flour mix* shopping list
- 1/2 teasp. xanthan gum shopping list
- 1/2 teasp. salt shopping list
- 4 teasp. baking powder shopping list

How to make it
- Preheat oven to 350'. Butter and lightly flour two 8'' round cake pans
- in large bowl, beat butter and sugar until light and fluffy.
- add egg yolks and cold water, mix well
- add vanilla
- in medium bowl combine flour, xanthan gum, salt, baking powder
- add to butter mixture
- in small bowl using an electric mixer, beat egg whites until stiff but not dry
- carefully fold egg whites into cake batter.
- pour batter into cake pans
- bake 20-25 mins.or until a toothpick comes out clean
- let cakes rest in pans for 5-10 mins. then then turn out to cool on a cake rack
- for cupcakes bake for 12-13 mins makes 18
