This is a Gluten-Free yellow cake out of Cooking Gluten-Free.. I have not made it but a Cooking Buddy asked for the recipe.

Ingredients
  • 8 TBSP. (1 stick) unsalted butter, softened
  • 1 cup sugar
  • 4 eggs separated, + one egg white
  • 1/2 cup cold water
  • 1 teasp. vanilla extract
  • 2 cups Wendy Wark's gluten-free flour mix*
  • 1/2 teasp. xanthan gum
  • 1/2 teasp. salt
  • 4 teasp. baking powder
  • * recipe for flour mix is on my home page

Directions
  1. Preheat oven to 350'. Butter and lightly flour two 8'' round cake pans
  2. in large bowl, beat butter and sugar until light and fluffy.
  3. add egg yolks and cold water, mix well
  4. add vanilla
  5. in medium bowl combine flour, xanthan gum, salt, baking powder
  6. add to butter mixture
  7. in small bowl using an electric mixer, beat egg whites until stiff but not dry
  8. carefully fold egg whites into cake batter.
  9. pour batter into cake pans
  10. bake 20-25 mins.or until a toothpick comes out clean
  11. let cakes rest in pans for 5-10 mins. then then turn out to cool on a cake rack
  12. for cupcakes bake for 12-13 mins makes 18
