How to make it

  • Preheat oven to 350'. Butter and lightly flour two 8'' round cake pans
  • in large bowl, beat butter and sugar until light and fluffy.
  • add egg yolks and cold water, mix well
  • add vanilla
  • in medium bowl combine flour, xanthan gum, salt, baking powder
  • add to butter mixture
  • in small bowl using an electric mixer, beat egg whites until stiff but not dry
  • carefully fold egg whites into cake batter.
  • pour batter into cake pans
  • bake 20-25 mins.or until a toothpick comes out clean
  • let cakes rest in pans for 5-10 mins. then then turn out to cool on a cake rack
  • for cupcakes bake for 12-13 mins makes 18
