I am making a stand here LOL. The REAL clams oreganato are removed from shells and chopped then mixed with other ingredients. Try them this way and let me know if you like them.

Ingredients
  • 24 littleneck (small) clams
  • clam liquer from clams
  • 2 c.Italian bread crumbs
  • fresh finely chopped oregano
  • chopped finely either red and green pepper or jalepeno
  • fresh grated Romano cheese
  • 1 tsp ext. virgin olive oil
  • 6 very finely chopped garlic cloves

Directions
  1. scrub clam shells
  2. put clams in freezer for 5 minutes
  3. open calms over bowl to save juice
  4. remove clam to chopping board
  5. chop finely set aside
  6. in hot frying pan drizzle oil
  7. lower heat
  8. add peppers and garlic
  9. saute a few minutes and remove from heat
  10. add to bowl with chopped clams
  11. add bread crumbs oregano and cheese and enough oil to hold together
  12. add slowly
  13. preheat oven 325
  14. cookie sheet with 1/2 inch kosher salt
  15. place a teasppon of mixture in each bottom of shell
  16. leave top on or off as desired
  17. sprinke tops with chopped oregano
  18. place on salt
  19. oven for 10 minutes
  20. broil for 5 minutes watching closely
  21. serve on platter
  22. garnish with sprinkled hot red pepper flakes
  23. and sprigs of cilantro or italian parsley stems removed
