We looked forward to this every spring when our rhubarb was finally up when I was growing up on the farm! Great cold or warm! Great on ice cream or on its own...

Ingredients
  • 8 c fresh rhubarb, chopped
  • 1 1/2 c sugar
  • 1 c small pearl tapioca
  • 1 1/2 c water

Directions
  1. Combine all ingredients in a slow cooker.
  2. Cover and cook on low for 2 to 3 hours. Chill or serve warm.

Love this! My mother-in-law use to make it when we lived in Minn.My first encounter with Rhubarb.We loved it over biscuits.I love Rhubarb Pie too.
