Citrus-Jerk Orange Roughy Recipe

Ingredients
  • 4 (4oz) orange roughy fillets
  • 1T+1t jerk seasoning
  • cooking spray
  • 1t olive oil
  • 4T orange marmalade
  • 3T water
  • 2T lemon juice
  • 1/8t cracked pepper

Directions
  1. Sprinkle both sides of fillet with seasoning, pressing gently to adhere. Coat a large nonstick skillet with cooking spray; add oil, and place over medium-high heat until hot. Add fillets; cook 3 minutes on each side or until fish flakes easily when tested with a fork. Remove from skillet; set aside, and keep warm.
  2. Add orange marmalade and remaining ingredients to skillet. Bring to a boil, and cook 1 minute. Pour sauce over fish, and serve immediately.
  3. 151 calories, 12% from fat.
