Ole Bean Wrap Recipe
This is a super yummy wrap sandwich that is sure to make you say,"Olé"!

Ingredients
  • 1-15.5 ounce can black bean, drained
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 cup cooked rice, warm
  • 1/4 cup picante sauce
  • 1-2 tablespoons enchilada sauce
  • 1/2 teaspoon ground cumin
  • 3/4 cup Manchego cheese or a mexican seasoned cheddar cheese
  • 2-10-inch flour tortillas

Directions
  1. Cook rice, set aside and keep warm.
  2. In a saucepan, heat beans over medium heat.
  3. Stir in peppers, rice, picante sauce, enchilada sauce and cumin.
  4. Cook 3-5 minutes.
  5. Divide mixture between the 2 tortillas and top with cheese.
  6. Wrap by folding side toward center, then folding bottoms toward center and then roll.
