How to make it

  • Cook rice, set aside and keep warm.
  • In a saucepan, heat beans over medium heat.
  • Stir in peppers, rice, picante sauce, enchilada sauce and cumin.
  • Cook 3-5 minutes.
  • Divide mixture between the 2 tortillas and top with cheese.
  • Wrap by folding side toward center, then folding bottoms toward center and then roll.
