Ole Bean Wrap

- 1-15.5 ounce can black bean, drained shopping list
- 1/2 cup red bell pepper, chopped shopping list
- 1/2 cup green bell pepper, chopped shopping list
- 1 cup cooked rice, warm shopping list
- 1/4 cup picante sauce shopping list
- 1-2 tablespoons enchilada sauce shopping list
- 1/2 teaspoon ground cumin shopping list
- 3/4 cup manchego cheese or a mexican seasoned cheddar cheese shopping list
- 2-10-inch flour tortillas shopping list
How to make it
- Cook rice, set aside and keep warm.
- In a saucepan, heat beans over medium heat.
- Stir in peppers, rice, picante sauce, enchilada sauce and cumin.
- Cook 3-5 minutes.
- Divide mixture between the 2 tortillas and top with cheese.
- Wrap by folding side toward center, then folding bottoms toward center and then roll.
