Banana Cream Pie Recipe

Ingredients

1 deep dish ready made pie crust

3 tablespoons cornstarch

1 1/3 cups water

1 (14-ounce) can Sweetened Condensed Milk (NOT evaporated milk)

3 egg yolks, beaten

2 tablespoons margarine or butter

1 teaspoon vanilla extract

2 medium bananas

Lemon juice from concentrate

Whipped cream, whipped

Directions

Bake pie crust per instructions

In heavy saucepan, dissolve cornstarch in water; stir in Sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly. Remove from heat; add margarine and vanilla. Cool slightly.

Slice bananas; dip in lemon juice and drain. Arrange on bottom of pie crust. Pour filling over bananas; cover.

Chill 4 hours or until set. Top with whipped cream. Garnish with sliced bananas if desired. Refrigerate leftovers.

I made this for Father's Day. Everyone just loved it! They said it was better than the banana cream pie which we used to buy at a fine Italian Bakery. Looks like I'm on it for banana cream pie from now on. Great easy recipe.

What I did was cover the pudding with plastic wrap so it wouldn't skin over. When cool I folded in the banana's which I did not dip in lemon juice and then poured the mixture into the pie crust, covered it with plastic wrap and put it in refrigerator until I was ready to add whip cream and serve. Yummy!!
