This was originally a coconut cream recipe but I like banana much more than I like coconut.

What I did was cover the pudding with plastic wrap so it wouldn't skin over. When cool I folded in the banana's which I did not dip in lemon juice and then poured the mixture into the pie crust, covered it with plastic wrap and put it in refrigerator until I was ready to add whip cream and serve. Yummy!!

I made this for Father's Day. Everyone just loved it! They said it was better than the banana cream pie which we used to buy at a fine Italian Bakery. Looks like I'm on it for banana cream pie from now on. Great easy recipe.
