Lemon Squares Recipe

Ingredients

2 cups flour

1 cup butter or margarine, softened

1/2 cup confectioner's (powdered) sugar

4 eggs

2 Tbsp flour

6 Tbsp lemon juice

2 cups sugar

1 tsp baking powder

Directions

Preheat oven to 350 degrees.

Grease a 9x13" cake dish.

For crust, combine 2 cups flour, butter (or margarine), and Confectioner's sugar. Mix well by hand.

Press mixture firmly and evenly into greased cake dish.

Bake crust for 20 minutes.

For filling, mix eggs, 2 Tbsp flour, lemon juice, sugar, and baking powder at medium speed until thoroughly combined.

Pour over baked crust, then bake cookies for 20-25 minutes (filling should be set but not hard or browned).

Allow to cool.

Sprinkle with additional Confectioner's sugar as desired.

Cut into squares and enjoy! :)

I tried the recipe, and it was totally awesome, but it didn't seem lemony enough. So what I did was reduce the butter and granulated sugar by a few tablespoons and then doubled the lemon juice. I hope this works out!!! Thanks for the awesome recipe.
