Lemon Squares

Another family favorite from my mom's kitchen! Lemon squares are a lighter dessert, a little tart and a little sweet at the same time. And everyone always goes back for second or third helpings...
Ingredients
- 2 cups flour shopping list
- 1 cup butter or margarine, softened shopping list
- 1/2 cup confectioner's (powdered) sugar shopping list
- 4 eggs shopping list
- 2 Tbsp flour shopping list
- 6 Tbsp lemon juice shopping list
- 2 cups sugar shopping list
- 1 tsp baking powder shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease a 9x13" cake dish.
- For crust, combine 2 cups flour, butter (or margarine), and Confectioner's sugar. Mix well by hand.
- Press mixture firmly and evenly into greased cake dish.
- Bake crust for 20 minutes.
- For filling, mix eggs, 2 Tbsp flour, lemon juice, sugar, and baking powder at medium speed until thoroughly combined.
- Pour over baked crust, then bake cookies for 20-25 minutes (filling should be set but not hard or browned).
- Allow to cool.
- Sprinkle with additional Confectioner's sugar as desired.
- Cut into squares and enjoy! :)
