How to make it

  • Preheat oven to 350 degrees.
  • Grease a 9x13" cake dish.
  • For crust, combine 2 cups flour, butter (or margarine), and Confectioner's sugar. Mix well by hand.
  • Press mixture firmly and evenly into greased cake dish.
  • Bake crust for 20 minutes.
  • For filling, mix eggs, 2 Tbsp flour, lemon juice, sugar, and baking powder at medium speed until thoroughly combined.
  • Pour over baked crust, then bake cookies for 20-25 minutes (filling should be set but not hard or browned).
  • Allow to cool.
  • Sprinkle with additional Confectioner's sugar as desired.
  • Cut into squares and enjoy! :)

    I tried the recipe, and it was totally awesome, but it didn't seem lemony enough. So what I did was reduce the butter and granulated sugar by a few tablespoons and then doubled the lemon juice. I hope this works out!!! Thanks for the awesome recipe.
