How to make it

  • Wrap 1 piece of bacon around each scallop.
  • Secure with a toothpick.
  • Place scallops in a 13x9-inch baking dish.
  • In a bowl, combine olive oil, brandy, parsley, pepper, salt and onion powder.
  • Mix well.
  • Pour over scallops.
  • Cover with plastic wrap and marinate in the refrigerator for 4 hours.
  • Remove scallops from marinade.
  • Discard marinade.
  • Arrange scallops on broiler pan.
  • Broil 4-inches from the heat for 7-10 minutes until bacon is brown.
  • Turn and cook 5 minutes more until scallops are opaque.
  • Arrange cooked scallops on a bed of salad greens to serve.
