Brandy Soaked Scallop Appetizer Recipe
Flavor-packed scallops for a wonderful appetizer at any special occasion!

Ingredients
  • 1 pound bacon, strips cut in half crosswise
  • 2 pounds small sea scallops
  • 1/3 cup olive oil
  • 1/2 cup brandy
  • 2 tablespoons chopped parsley
  • 1 clove garlic, minced
  • salt and pepper to taste
  • onion powder, start with 1/2 teaspoon
  • Salad greens, for presentation

Directions
  1. Wrap 1 piece of bacon around each scallop.
  2. Secure with a toothpick.
  3. Place scallops in a 13x9-inch baking dish.
  4. In a bowl, combine olive oil, brandy, parsley, pepper, salt and onion powder.
  5. Mix well.
  6. Pour over scallops.
  7. Cover with plastic wrap and marinate in the refrigerator for 4 hours.
  8. Remove scallops from marinade.
  9. Discard marinade.
  10. Arrange scallops on broiler pan.
  11. Broil 4-inches from the heat for 7-10 minutes until bacon is brown.
  12. Turn and cook 5 minutes more until scallops are opaque.
  13. Arrange cooked scallops on a bed of salad greens to serve.
