Brandy Soaked Scallop Appetizer

- 1 pound bacon, strips cut in half crosswise shopping list
- 2 pounds small sea scallops shopping list
- 1/3 cup olive oil shopping list
- 1/2 cup brandy shopping list
- 2 tablespoons chopped parsley shopping list
- 1 clove garlic, minced shopping list
- salt and pepper to taste shopping list
- onion powder, start with 1/2 teaspoon shopping list
- salad greens, for presentation shopping list
How to make it
- Wrap 1 piece of bacon around each scallop.
- Secure with a toothpick.
- Place scallops in a 13x9-inch baking dish.
- In a bowl, combine olive oil, brandy, parsley, pepper, salt and onion powder.
- Mix well.
- Pour over scallops.
- Cover with plastic wrap and marinate in the refrigerator for 4 hours.
- Remove scallops from marinade.
- Discard marinade.
- Arrange scallops on broiler pan.
- Broil 4-inches from the heat for 7-10 minutes until bacon is brown.
- Turn and cook 5 minutes more until scallops are opaque.
- Arrange cooked scallops on a bed of salad greens to serve.
