A cooked cereal mush of cornmeal. Called Polenta by the Northern Italians. Eaten hot as a breakfast cereal, but may be used chilled as a component of other dishes.

Frodo suggest using beef stock in lieu of water and then using the cooked mush as a crust for tamale pie. In this way frodo, shows us that our imaginations is the only limit in using this versatile dish.

i use this recipe, put sub the water for beef stock, and then use the mush in a tamale pie.
