Herbed Artichokes With Sour Cream Sauce Recipe
This is a very elegant side dish that is always impressive go guests. I like it because I'm a huge artichoke fan and the creamy sauce that goes over is good by itself as well.

Ingredients
  • 6 medium artichokes trimmed
  • 2 quarts water
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 3 tablespoons olive oil
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 3/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 2 tablespoons balsamic vinegar
  • 1/4 cup chopped parsley

Directions
  1. Place artichokes, herbs and olive oil in large pot with boiling water.
  2. Cover and simmer 40 minutes.
  3. Serve hot or at room temperature with sour cream sauce.
  4. To make sauce sour cream, mayonnaise, cumin, garlic powder, vinegar and parsley.
  5. Allow to stand 30 minutes to allow flavors to blend.
