Ingredients
  • 1/2 pound lean ground beef
  • 1/2 cup chopped white onion
  • 15 ounce can black beans drained
  • 14-1/2 ounce can diced tomatoes
  • 1 cup frozen corn
  • 1/2 cup uncooked regular rice
  • 1/2 cup tomato catsup
  • 1 tablespoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried oregano leaves
  • 1/2 cup shredded cheddar cheese
  • Tortilla chips

Directions
  1. In large nonstick skillet cook beef and onion until beef is browned then drain well.
  2. Add remaining ingredient except cheese and tortilla chips then mix well.
  3. Simmer covered for 30 minutes.
  4. Remove skillet from heat then sprinkle beef mixture with beef.
  5. Cover and let stand until cheese is melted.
  6. Serve with chips.
